I went to Western Meats in Tumwater over this last weekend after checking out the Skookumchuck and Newakum Rivers. What a fantastic live butcher shop.I needed smoked ham hocks for pea and bean soup.Its well worth a stop in there. They had some fantastic Filet Mignons at $6.00 each .Each one wrapped in bacon and 8oz each. Just about everything they had there looked excellent. If you like a live butcher with a wait staff that was more then willing to help you this is the place.Just thought I'd pass this one on to you guys. Its across the street from the Deshutes river park.

I agree Brent. People get confused between these two cuts of beef.A true brisket for me is in two parts held together by a small fat layer.Some stores advertise brisket and sell ya tri-tip.This market does custom cutting along with the usuals.Id say ifin you want a full brisket go to the "BEEF SHOP" in Centrailia.They are a slaughterhouse that sells pig.beef,lamb or goat.You can bring it in on the hoof or buy what they have. Its best to call first and reserve.

Equal to Stewarts .Western has more choice cuts to me. They feature alot of Stuffed chicken breasts,ie.. codon bleu .The buffalo is frozen as in most markets. I like Lamb but dont buy from either Stewarts or Western .They both use foriegn lamb from downunder.I prefer the taste of American lamb .Like Stewarts the service is great. They will wrap your meat anyway you want it.They too offer freezer combo packs.Either place is great to me. It just gave me another choice of fresh live butcher markets.Even in Centrailia theres a place right off I-5 called "THE BEEF SHOP" they are a custom slaughterhouse.They also sell good beef or lamb.There you can take it on the hoof or buy what they have.
